Cucumber, tomato & corn salad

Ingredients

 

1 cucumber, washed & diced

3 tomatoes, washed & diced

215g corn, tinned or fresh

½ small onion, finely chopped

10g fresh coriander leaves

1T olive oil

Juice of ½ lemon

Salt & black pepper to taste

 

Method

If using frozen or fresh corn, steam it for a few minutes until soft before using.

Mix all the ingredients, tear the coriander leaves into the salad, toss and serve immediately.

Coriander, also called cilantro or Chinese parsley, is a very aromatic herb that complements the flavours in this salad very well. The leaves are small and beautiful and you don’t even have to chop them. Just tear them off the stalks and toss into your salad.
